Job Description:
The individual whom takes this position will need to travel between our Mt. Pleasant and James Island location to assist with the store's corresponding Prep Cook & Pit-Master (Weekly schedule listed below). This role is will require the employee to float around between positions.
Prep Cook Position Description:
- AM Prep follows prep list created by Executive Chef or Sous Chef using set recipes.
- Measure ingredients and seasonings to be used in cooking.
- Washing and chopping vegetables, cutting meat, etc. to prepare for cooking.
- Follows recipes, portion controls and presentation specifications as set by Melvin’s BBQ.
- Must maintain a clean and organized station while practicing good safety and sanitation skills during prep and service times.
- AM Back-Up Sets up steam table on Front Line with appropriate water levels and pans in place. Follows 'Daily Backup Sheet' and heats up all food to proper temperatures for service.
- Perform other kitchen duties as assigned.
Assistant Pit-Master Position Description:
- Pit Masters will trim and season meats; manage fires for smokers; clean and maintain smokers.
- Monitor and Manage the overall quality of our smoked meats.
- Additional duties include - cutting meats, preparing sides and sauces, and general restaurant cleaning.
- Execution of brand excellence through the highest quality barbecue available.
- Previous experience with BBQ is preferred, but not required.

WEEKLY SCHEDULE:
Monday: Prep position at Mt. Pleasant from 7am-2pm.
Tuesday: OFF
Wednesday: Assistant Pit-Master at Mt. Pleasant from 5am-2pm with an hour lunch break.
Thursday: Prep position at Mt. Pleasant from 7am-2pm.
Friday: Assistant Pit-Master at James Island from 5am-2pm with an hour lunch break.
Saturday: Prep position at Mt. Pleasant from 7am-2pm.
Sunday: BOTH LOCATIONS CLOSED
